Chef Francesco Rota opened Trattoria Emilia because he wanted to introduce Melbourne the food he enjoyed growing up in the Emilia Romagna region of Italy. 
 
"Food really does vary so much from region to region in Italy" he says, "and I wanted to show people how we eat where I come from."
 
For Francesco, hosting a masterclass in the restaurant is a natural extension of that.  "It's an opportunity for me to share traditional recipes and cooking techniques with people who are interested in Italian cuisine - I can't wait."
 
So what does a masterclass at Trattoria Emilia look like?
 
Participants can expect to begin the day like any good Italian, with a strong coffee and a pastry in the front 'bar' section of the restaurant where Francesco will talk you through the recipes he's about to teach you, namely:

 

- Gnocco fritto (deep fried, crispy pillows of delight);

- Hand-made tagliatelle; and

- How to achieve the perfect authentic Bolognese ragu.

 

After some quality time in the kitchen, participants will be treated to a shared-style 4-course meal with matching wines. Dishes served will include the ones listed above (Gnocco fritto, Tagliatelle and Bolognese) along with Trattoria Emilia's Crudo di dentice (snapper tartare), house-made salami and pates, Tortelloni Emiliani (decadent mortadella and cheese filled pasta) and to finish, Francesco's own take on the Viennetta ice-cream.
