Emilia Romagna is considered by many as Italy's Greatest Gastronomic Treasure. In this experience, you will discover some of the very best local small artisans of the King of Cheeses, and world famous Parmigiano Reggiano.
Starting early, you will embark on your first visit to a local Parmigiano Reggiano DOP producer in the hills (where they produce a distinctly superior product). The production of Parmesan cheese, an icon of Italian gastronomy, dates back to the year 1200 when monks discovered a way to preserve the cheese made from the local milk for lengthy periods. Together with a qualified gastronomy guide, you will see the entire production process from its humble beginnings as creamy milk through to the glorious golden wheels of the final product which bears the seal of the Parmigiano Reggiano Consortium. You will also see the production of fresh Ricotta (and taste it while it is still warm) and visit the other areas of this tiny artisan dairy where they make various fresh cheeses and yoghurt. The visit will end with a tasting of some of the dairy’s own products, some local charcuterie, and, of course tastings of Parmigiano Reggiano, at the various stages of maturation.
Prices start at €159 per person (for a group of 2) and includes:
- A guided tour of the Dairy w/bilingual gastronomy guide
- A fresh ricotta tasting
- A tasting of 3 different maturations of Parmigiano
- Local product tastings, wine and charcuterie (enough for a light lunch)
